Banana Bread (Starch Free)


IMG_4455This banana bread is incredibly rich and moist. It’s so sticky it’s almost a pudding. Very delicious and completely free of starch! And to make it even better, it’s a one bowl, no mixer magic recipe!

To whip this up you will need:

  • 3 bananas smashed
  • 1/3 cup melted butter
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 2 eggs whisked
  • 2/3 cup brown sugar
  • 1 tsp baking soda
  • Pinch of salt
  • 1/3 cup desiccated coconut
  • 1/3 cup hazelnut meal
  • 2/3 cup almond meal
  • 1/3 cup coconut flakes

To make it happen:

  1. Preheat the oven to 180°C. Grease and line a loaf pan.
  2. In a large bowl smash the bananas with the back of a fork and mix butter through.
  3. Add vanilla, cinnamon, eggs and sugar and mix with a wooden spoon.
  4. Sprinkle in baking soda and salt. Add the coconut, almond and hazelnut meal one at a time and mix through until moist. There is no need to sift any of these.
  5. Pour mixture into prepared pan and bake for 55-60 minutes.  Check with a toothpick before removing and allow to cool for 10 minutes before removing from pan.
  6. Serve warm with a cup of tea. Yum!!
